The East Coast's lobster rolls could be a main dish. A succulent lobster is encased in a creamy sauce, and a brioche bun provides a delicious flavor.

Every time I am on the East Coast I must have a Lobster Roll. If I'm in Maine, Connecticut or Newfoundland (or any other town/state/province/town that borders the Atlantic), I look for any restaurant serving them. If you have ever visited the East Coast you will know that nearly every restaurant offers lobster rolls even if it does not specialize in seafood.
Unfortunately, the best rolls of lobster are only available on the East Coast. This is why I developed this recipe. I have stuck with the basics. It's a mix between a Maine and Connecticut version. (Those in Maine prefer it warm, while Connecticut residents keep it simple and cool -- see below for other varieties). Let me know what you think of this sandwich in the comments section.

Are Lobster Rolls Good for You?
The lobster is low in fat and calories, but rich in minerals like zinc, selenium and vitamin B12. This recipe uses low-fat (or full-fat) mayonnaise, celery (which is high in fiber), lemon juice and zest and other ingredients that are rich in vitamin C. The recipe calls for butter, which is high in calories and fat, and brioche rolls, which are higher in calories and fat. This recipe is healthy, but do not overindulge or you will end up with a lot of fat and calories.
Ingredients
Here are the ingredients that make up a lobster roll. You can add/remove the ingredients to suit your taste (see variations section for ideas ).).
- 1 lb frozen lobster meat, cooked
- 14 cup of celery, chopped
- 1/4 cup low-fat mayonnaise
- Spring onion, sliced 1 tbsp
- Lemon juice, 1 tbsp
- 1 tsp lemon zest
- 1/4 teaspoon salt
- 4 brioche hot dog buns
- 1/4 tsp ground black pepper
- 1 tbsp Butter
Instrucciones
Mix celery, mayonnaise and spring onions in a large mixing bowl. Add the lemon zest, juice, salt and pepper.
Add
Drain all liquid from the lobster. Mix the lobster pieces in the bowl until they are coated. Taste and add more salt, lemon, or pepper.
Toast
Trim the edges of the brioche roll and cut down the middle. Melt butter in a pan. Toast the rolls from both sides.
Spoon
Spread the lobster mixture on the rolls.

Variations
This is an East Coast specialty, but the rest of the world can still create their own versions.
Connecticut style: Connecticut residents like things simple. Warm lobster meat is tossed with melted butter, and then served in a hot dog bun. It is very easy to prepare and delicious.
Mexican-inspired : You can also add Mexican flavors to your lobster rolls by mixing lobster meat with lime juice, cilantro, jalapenos and avocado. Serve it on lettuce or in a tortilla for a lighter version.
Curry spiced: Combine the lobster meat, curry powder, mango chutney, and yogurt. You can serve them in brioche but I prefer pita.

A 1-pound lobster will yield about 3-4 ounces, plus or minus.
The Brioche Buns are sweeter than the regular rolls and are more like a mix between a bread and a pastry. The buns also contain more butter, which makes them a great combination with lobster.
I sauté it in a pan with some butter. Drain the liquid off before adding it to your mayonnaise.
How to store lobster rolls
Allow the lobster rolls to cool completely. Wrap them tightly in plastic wrap or store them in a container that is airtight. The fridge should be able to keep them for 2 days. Take them out of the refrigerator for 15 minutes to bring them to room temperature. Place them in a dish that can be heated. Heat them up in the oven for 10 minutes at 350degF. It is not recommended to freeze lobster rolls as they will lose their taste and texture.

I'll give you some tips about where to find organic meats at a low price and how much it costs per pound. You will learn how to make the best out of what you purchase.
For healthy eating, you don’t have to spend a lot. Sometimes you need to be creative in order to save money and still eat healthy. Here's my list to help you keep food costs low while still enjoying all the health benefits of organic meat.
- Buy bulk food at wholesale clubs. Sams Club and Costco both offer great options for buying bulk foods like pork chops and chicken breasts. You may be able to get large quantities of meat for as low as 50 pounds if your home is near one of these stores. You won't have to waste meat. If you buy it in bulk you can freeze it so it lasts more.
- Look online to save money on meat. Amazon offers Prime Pantry, a weekly deal with free shipping on orders above $35. You can get discounts on ground beef, beef roasts, lamb steaks and pork loins. It's simple to visit their website to view the latest offerings at different times.
- Locate a farmer in your area. Local farmers are usually cheaper than big box retailers as they don’t pay high stocking fees. Local farmers also know exactly what their animals have eaten and drank so they can determine what's in their bodies.
